Frédéric Roy started to bake pastries at eight years old but he had to wait until he was 14 years old in 1987 to start being professional. He was a pastry apprentice in dijon (Bourguogne) and graduated in 1987. After five years working in a bakery, he moved to Monaco to become a pastry chef. When Frédéric moved back to Bourguogne to be pastry chef at Hotel De La Poste in Saulieu – a four star Hotel – and bread consultant for Bernard Loiseau at La cote d'Or Restaurant, three star.
In 1994 Frédéric Roy moved in Arles, South France for 10 years. In 2003 he won the Tour de France pastries competition with a bicycle all made of sugar. In 2006 Frédéric moved in California with his wife and three kids to work at the Figaro Bistro in Los Angeles. Soon, a producer of movies and commercial asked Frédéric Roy to make pastries for her movies. Frédéric Roy made pastries for the AT&T commercial, the Made of Honor, movie with Patrick Dempsey, also Forgetting Sarah Marshal, with Kristen Bell, and was the pastry chef for the documentary about chocolate, In Search of the Heart of Chocolate by Sarah feinbloom.
Today Frédéric Roy, Executive Pasrty Chef, accepted the challenge of working for La Bohème pâtisserie and Restaurant in Burlingame. It is a new and a big challenge for him to work in such a nice place near San Francisco. Everyday he bakes fresh pastries and breads. His speciality is the Napoleon and the Croquembouche.
